Instagram trims whitespace when it saves a bio or a caption. A line with nothing on it is whitespace, so it gets removed and the lines either side collapse together. Your paragraph breaks disappear on save even though they looked right while you were typing.
The fix is to put something on the blank line that has no visible width. This tool uses U+2800, the blank Braille pattern, which renders as nothing on iOS, Android and the web but is a real character, so the trim leaves it alone. Each one costs you a character against the 150 limit on bios.
